This is a definitely a hearty and tasty Italian sausage and tortellini soup that is just what cool (or cold) weather calls for! This soup starts out with Italian style sausage, which itself is already packed with flavor. The chicken broth and diced tomatoes fill out the body of the soup and the cheese tortellini brings everything together. The addition of a little fresh baby spinach leaves wilt into the soup nicely. Then top the soup off by adding a little parmesan cheese on top of this soup to melt and really add a nice finishing touch of flavor! This tortellini soup with Italian sausage and spinach is just so easy to make and perfect for anytime you want a twist on tomato soup!
