CREAMY TOMATO TORTELLINI SOUP

Ingredients

  • 1 Tbsp. olive oil
  • 1/2 cup chopped onion
  • 4 cloves garlic, minced
  • 4 bay leaves
  • 1/2 tsp. crushed red pepper flakes
  • 2 (28 oz.) cans diced tomatoes
  • 32 oz. vegetable broth
  • 1/4 cup fresh basil, chopped or 4 tsp. dry basil
  • salt and pepper to taste
  • 5.3 oz. container plain Greek yogurt
  • 18 oz. pkg. frozen cheese tortellini
  • grated parmesan cheese for garnish, if desired

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic; cook 5 minutes, or until tender.
  2. Stir in bay leaves, crushed red peppers, basil, salt, and pepper. Mix well, then add the diced tomatoes and vegetable broth; stir. Bring to a boil and then simmer on low for 15 minutes.
  3. Remove the bay leaves from the pot. Use a hand immersion blender to blend the soup (or carefully transfer the soup to a blender to blend and then return to the pot to continue cooking). Stir in Greek yogurt until well combined.
  4. Stir in cheese tortellini and cook on medium-low heat until tortellini is cooked, about 6-8 minutes (refer to the package directions for suggested cooking time).
  5. Serve warm.
  6. Garnish with grated Parmesan cheese, if desired.

Notes

Before Getting Stated:

  • Garlic: mince 4 cloves garlic (or use 2 tsp. garlic from a jar)
  • Onion: chop onion
  • Basil: chop fresh basil (unless using dry)
  • Parmesan Cheese: grate or use pre-grated
