Creamy Tomato Tortellini Soup

Rich, creamy tomato soup? Yes, please! Tortellini too? Better yet! I have no doubt you’ll love this simple and delicious Creamy Tomato Tortellini Soup! It has become a favorite in my family. Add some crusty bread and a salad and you’ve got an entire meal!

Greek yogurt gives this tomato soup its amazing creaminess without all of the calories of heavy cream! You won't believe just how easy this soup is to make! Don’t have greek yogurt? No problem, you can swap sour cream for the greek yogurt.
CREAMY TOMATO TORTELLINI SOUP
Ingredients
- 1 Tbsp. olive oil
- 1/2 cup chopped onion
- 4 cloves garlic, minced
- 4 bay leaves
- 1/2 tsp. crushed red pepper flakes
- 2 (28 oz.) cans diced tomatoes
- 32 oz. vegetable broth
- 1/4 cup fresh basil, chopped or 4 tsp. dry basil
- salt and pepper to taste
- 5.3 oz. container plain Greek yogurt
- 18 oz. pkg. frozen cheese tortellini
- grated parmesan cheese for garnish, if desired
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and garlic; cook 5 minutes, or until tender.
- Stir in bay leaves, crushed red peppers, basil, salt, and pepper. Mix well, then add the diced tomatoes and vegetable broth; stir. Bring to a boil and then simmer on low for 15 minutes.
- Remove the bay leaves from the pot. Use a hand immersion blender to blend the soup (or carefully transfer the soup to a blender to blend and then return to the pot to continue cooking). Stir in Greek yogurt until well combined.
- Stir in cheese tortellini and cook on medium-low heat until tortellini is cooked, about 6-8 minutes (refer to the package directions for suggested cooking time).
- Serve warm.
- Garnish with grated Parmesan cheese, if desired.
Notes
Before Getting Stated:
- Garlic: mince 4 cloves garlic (or use 2 tsp. garlic from a jar)
- Onion: chop onion
- Basil: chop fresh basil (unless using dry)
- Parmesan Cheese: grate or use pre-grated
