Low Carb Enchilada Meatball Bake

Juicy and delicious meatballs submerged in enchilada sauce….amazing!

This is a quick and healthy way to spice up mealtime!  The meatballs are low carb and delicious.  Adding the enchilada sauce and cheese makes it feel like you’re cheating, but making it with ground turkey instead of beef makes it even more healthy.  Don’t expect leftovers!

About This Recipe  

My family loves Mexican cuisine, so I try to make it as healthy as possible while still doing the meal justice with spices and incredible taste.  For these meatballs I substituted ground turkey for ground beef and used oats instead of bread crumbs. The amount of enchilada sauce and cheese makes this so creamy and delicious!

You can skip the cheddar cheese in the meatballs and use Mexican cheese blend for it as well as on top.

It can be served with rice, tortilla chips, tortillas, guacamole, sour cream, lettuce, and tomatoes or any combination and it makes a complete meal.
