About This Recipe  

This recipe is so easy to throw together, especially if you start with ready-made pulled pork that can be found in the freezer aisle! Use your favorite BBQ sauce, make up this simple coleslaw and top it off with sour cream! Never had coleslaw on pork nachos? Give it a try, it is absolutely delicious!

SHEET PAN BBQ PULLED PORK NACHOS

Mouthwatering and delicious! These baked BBQ pulled pork nachos are loaded with flavor! Shredded pork, BBQ sauce, jalapeños, and not 1 but 2 kinds of shredded cheese all served up with cilantro-lime coleslaw, your favorite tortilla chips and topped with sour cream! An absolute pleasure food!

Ingredients

  • 1 lb. pulled pork
  • 1/2 - 3/4 cup BBQ sauce (plus 2 Tbsp.)
  • 8 oz. mild cheddar cheese, shredded
  • 8 oz. Monterey Jack cheese, shredded
  • 1 jalapeño, sliced
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1/2 Tbsp. olive oil
  • 2 cups coleslaw mix
  • 1/4 cup cilantro-lime dressing
  • tortilla chips
  • sour cream for serving, optional

Instructions

  1. Preheat oven to 350 F. Lightly coat 9"x13" pan with baking spray; set aside.
  2. Mix together the coleslaw mix and cilantro-lime dressing. Place in refrigerator until ready to use.
  3. Mix together the pulled pork and BBQ sauce; set aside.
  4. Place the olive oil in a small pan. Add the jalapeño, garlic, and onion. Saute until light brown.
  5. Spread a thick layer of tortilla chips in the prepared pan. Cover with half of the cheddar and Monterey Jack cheeses. Top the cheese with an even layer of pulled pork, top the pork with the remaining cheeses, and then add the saute vegetables on top.
  6. Bake nachos for 12-15 minutes, or until cheese is fully melted. Remove from oven.
  7. Drizzle 2 Tbsp. BBQ sauce over nachos.
  8. Serve topped with cilantro-lime coleslaw and sour cream, if desired.

Notes

Before Getting Stated:

  • Cheeses: shred the cheeses or use prepackaged shredded cheeses
  • Jalapeños: slice
  • Garlic: mince 3 cloves garlic
  • Onion: thinly slice
