Sensational Turkey Sausage

This homemade turkey sausage is so amazing you won’t believe you just made it!

This is a super easy, extremely tasty, healthy homemade recipe for turkey sausage that is so quick to put together you will be making it all the time! And the smell? Amazing . . . In fact, if you close your eyes, I bet you can almost smell it right now . . . It’s time to bring that smell to reality, so let’s get cooking!

Have you ever made homemade turkey sausage? After you've made it once, you'll wonder why you never did so before. It may seem intemidating, but it's really not . . . in fact, it's insanely simple. But the best part is that YOU control the spice blend.  That means that you can adjust the amount of any of the spices, especially the red pepper flakes.  Some people want a mild sausage, some a medium heat, and then there are those who want to crank up the heat and call in the fire department.  That means you can completely omit it, add the recipe amount of 1 tsp., or dial it up to 2 tsp. And YOU know exactly what's in it!  First, mix the spices together in a small bowl and set aside. Then get out a large bowl and toss in the ground turkey. Sprinkle the combined spices over the meat and either make it into sausage patties, or crumble it up and cook it to add to whatever you desire (breakfast casserole, sausage gravy, etc.)

Using your hands to mix everything together is a really efficient method when working with ground meat, but if you don't like touching raw meat, a large spoon will work as well. Either way, you'll want to mix until all the spices are thoroughly dispersed throughout the meat.

After the sausage mixture is well-combined, form it into 12 balls using your hands or a cookie scoop. I place them on a piece of waxed paper, fold the waxed paper over, and hand- flatten into 3-inch patties.

Cook the patties for about 5 to 8 minutes, until they're nice and brown on the underside. Then flip 'em, cooking on the second side until browned (about 5 more minutes).

Once the patties are done, transfer them to a paper towel-lined plate to drain off any grease.

If you want to make up a batch to freeze, mix together as directed and flatten, then arrange the patties in a single layer on a parchment paper or wax paper-lined baking sheet and freeze until solid. Then transfer to a freezer plastic bag and freeze for up to 3 months.
